Blueberry & Vanilla Oat Squares

It feels like summer! I have been absolutely loving the beautiful english weather these last few weeks. It’s making my days so much happier! I’ve been loving taking long walks, doing yoga outside and opening up all the windows in my dance studio. I always feel that as the weather gets warmer I’m far more active, and take up many other forms of exercise out of my regular dancing. With this in mind I thought I’d do a Fit Food recipe today, combining the fresh summer flavour of blueberries with sprouted brown rice protein powder to make these incredibly delicious Blueberry, Vanilla & Oat squares. They take no time at all to make and are the perfect bite-sized breakfast, snack and sweet treat.

The Ingredients

3 mashed bananas

7 medjool dates

1/3 cup Dairy Free Milk

1 tbsp pure vanilla extract

1 cup oats

3/4 cup brown rice protein powder (I use Sunwarrior) Note: You can also use rice flour but it doesn’t have the same protein content.

1/2 cup blueberries

Method

Preheat the oven to 180 degrees celcius.

Add the banana, pitted medjool dates, vanilla extract and dairy free milk to a blender. Blend until smooth, and pour into a mixing bowl. Stir in the oats and protein powder/rice flour. Once it’s a smooth mix add in the blueberries and stir well to mix. Pour into a brownie dish and  evenly spread with a knife, you want it to be a few inches high. Put in the oven to bake for 25 minutes or until browning on the top. Cut into slices and enjoy!
