Strawberry, Coconut & Vanilla Overnight Oats

Overnight oats are one of my favourite, favourite breakfasts! The sheer ease of making them in under 5 minutes the night before is really awesome, and means you have a deliciously healthy treat awaiting you in the morning. I often make a big batch with the basic ingredients; Oats and Dairy Free Milk before adding in all the other flavours as the days go by. I do love experimenting with all the different flavour combinations, but this one for Strawberry, Coconut & Vanilla Overnight Oats has definitely become my favourite. The flavours work together harmoniously to create something really special. The texture is creamy, and because the oats have been soaked overnight you’re able to absorb the maximum benefit from the ingredients, which is really just more for your money’s worth.

The method couldn’t be easier too as you just need a few ingredients, mix them in a bowl and store them in Jars for each day.

The Ingredients

1 1/2 cups oats

2-3 cups oat milk (start with 2 and work your way to 3)

4 Tablespoons coconut yoghurt

2 Tablespoons raw honey

1 tsp pure vanilla extract

1 cup strawberries

Method

Start by adding the oats to a bowl. Chop the strawberries and mix in with the oats. Next add in 2-3 cups oat milk, starting with two and adding more stirring as you go. Judge the amount by how much milk the oats soak up, you don’t want them to be sitting in too much milk, but enough that it can absorb. Then stir in the raw honey, coconut yoghurt and vanilla extract.

Mix and pour into four jars (or one large one) – Store in the fridge for up to 6 days.

Note: If you can’t find coconut yoghurt, add 4 tablespoons canned coconut cream and an extra teaspoon of raw honey.
