This recipe is two for the price of one! I’m a pretty frequent snacker and love something I can throw together in a hurry. The first recipe tells you how to make your own creamy peanut butter with a sweeter twist. We use roasted peanuts, a touch of raw honey and a generous sprinkle of cinnamon to make it a spread to remember! It’s so much more delicious than your usual store-bought peanut butter and better for you too, as it’s got no palm oil or refined sugar. All you need is a food processor and your good to go. If you can’t be bothered to make your own then I really recommend Meridian Peanut Butter – it’s really delicious, and contains absolutely no nasties.

The second recipe is a delicious example of how to use your homemade peanut butter by spooning it into gooey caramel Medjool dates…which is really less of a recipe and more of a compilation of ingredients that you can put together in seconds!

The Ingredients

PEANUT BUTTER WITH CINNAMON AND RAW HONEY

2 cups peanuts

2 tsp raw honey

1 tsp cinnamon

a generous pinch of salt (I use pink himalayan salt)

PEANUT BUTTER STUFFED MEDJOOL DATES

2 medjool dates

1-2 tablespoons peanut butter

Method

PEANUT BUTTER WITH CINNAMON AND RAW HONEY

Preheat the oven to 190 degrees celsius. Put the peanuts on a roasting tray and roast for around 5-10 minutes until golden but not burnt. Make sure to check on them frequently!

Then add the roasted peanuts to a high-speed food processor and process for around 8 minutes until totally smooth and creamy. You may need to process it for more or less time depending on the machine you use! Once it looks like peanut butter, add in the cinnamon, salt and honey and process again for a further minute. Pour out of the jar and leave to cool (though I love it warm out of the processer..mmm!).

 

PEANUT BUTTER STUFFED MEDJOOL DATES:

Slice the date open and remove the stone. With a spoon place the peanut butter in the opening of the date and enjoy!
